Molasses is the liquid by-product formed during crystallisation of cane or beet juice into sugar.

Most molasses is used by the mill which produces it, typically for ethanol manufacture or other products.

However, around 6m tonnes is made available for domestic or international trade each year.

The EU and USA are the world’s major importers of molasses.

It typically contains 50-60% sugar by dry weight, meaning it can be used as a sugar alternative, in fermentation or as animal feed.
